Warm, pillowy arepas (corn flatbreads) split open and stuffed with shredded chicken, creamy avocado, fresh cilantro, and lime. These are Venezuelan street food at its finest—quick to make, endlessly customizable, and deeply satisfying. The arepa itself is made from arepa flour (precooked cornmeal), fried until golden and crispy outside, soft and steamy inside.

Steps

Prepare arepa dough: In a large bowl, combine arepa flour (2 cups), warm water (2 cups), and salt (1 tsp). Mix with your hands until a smooth, play-dough-like dough forms. The dough should hold together but not be wet. Add more water or flour as needed. Knead briefly (1-2 minutes). Let rest for 5 minutes.
Shape arepas: Divide dough into 8 equal portions. Roll each between your palms into a ball, then flatten into a thick patty about 2.5 inches wide and 0.5 inch thick. The arepa should be sturdy, not thin—it will puff slightly as it cooks.
Heat oil: In a shallow pan or deep fryer, heat 1-2 inches of oil to 350°F (175°C). Test with a small piece of dough—it should sizzle immediately and rise to the surface.
Fry arepas: Working in batches to avoid crowding, fry arepas for 3-4 minutes per side until golden brown and crispy outside. The outside should be crispy, the inside soft and steamy. Drain on paper towels.
Prepare filling: While arepas cook, season shredded chicken with cumin, lime juice, salt, and chopped cilantro. Slice or mash avocados with lime juice and salt.
Assemble: While arepas are still warm, carefully slice each one horizontally to create a pocket, leaving a hinge on one side so the arepa doesn't fall apart. (Or simply split open.) Stuff each arepa with shredded chicken, avocado, cilantro, and a squeeze of lime juice.
Serve immediately while arepas are warm and crispy. These are best eaten fresh, within minutes of assembly.

Steps

Make dough: Add arepa flour, warm water, and salt to TM bowl. Knead | Speed 3 | 30 seconds until dough comes together. Rest 5 minutes.
Shape and fry (manual): Divide dough into 8 balls, flatten to 2.5-inch patties. (TM cannot fry.) Heat oil to 350°F in shallow pan. Fry 3-4 minutes per side until golden and crispy.
Prepare filling: Shred or chop cilantro quickly with TM if needed: Chop | Speed 5 | 5 seconds. Season chicken with cumin, lime, salt, and cilantro by hand.
Assemble and serve: Split warm arepas open. Fill with shredded chicken, avocado, cilantro, and lime juice. Serve immediately.

Note: The TM can mix dough beautifully, but arepas are best fried in a traditional pan for optimal crust and texture. Keep arepas warm and assemble shortly before serving for best results.
