Cognac Manhattan

Cognac-forward with Benedictine and Champagne—an elegant, luxurious riff on the classic Manhattan.

The Cognac Manhattan swaps rye for cognac as the base spirit, which changes the drink's character entirely. Cognac is grape-based: fruit-forward, softer, with dried fruit and oak rather than rye's spice and grain. It sits in a Manhattan the way a French silk sits in a collar rather than a necktie. Benedictine, which already appears in the Vieux Carré, connects cognac to herbal sweetness and gives the drink a genealogy worth tracing.

The Champagne splash is the unusual piece. Stirred cocktails are generally still drinks; effervescence belongs to cobblers and fizzes. Here it works because cognac's richness needs something to cut it, and Champagne provides both the acid and the lift. The bubbles carry aromatic compounds up through the glass. It changes how the drink smells, and that changes how it tastes.

The result feels celebratory in a way that rye-based Manhattans do not. This is a special-occasion cocktail, not a Tuesday drink. Save it for something worth the bottle.
